- Make ready 3 of Large Eggs (Room Temp).
- It’s 1/2 tsp of Cinnamon Powder.
- It’s 3/4 Cup of Ground Sugar- (150 gms).
- It’s 1/4 tsp of Salt.
- It’s 1/2 tsp of Baking Powder.
- Take 1/8 tsp of Baking Soda.
- You need 150 gms of Butter.
- You need 1.5 Cups of Almonds Meal/Flour- (150 gms).
- Make ready 1 of Large Lemon Zests/Rinds.
- You need 1 of Large Orange Zests/Rinds.
- You need 1/2 Cup of Coconut Flour/Grounded- (50 gms).
- Prepare of as required For the Garnish-Powdered Sugar & ‘Santiago Cross’ Stencils.

- In a large mixing bowl- take 3 whole eggs and rest all other ingredients (as per the aforementioned measurements given), one after the other.
- Sift all the Dry Ingredients at least twice to incorporate sufficient air inside, to bake a soft & fluffy & yummy Cake 🍰.
- Now mix both the Dry & Wet Ingredients altogether & keep on folding- Follow the ‘Cut & Fold’ method but don’t over mix at all.
- Take a 9/10 inch Round-Springfold Non-stick Cake Tin/Mould, Butter/Grease it generously & spread a parchment/ baking sheet in it & put it inside the oven to bake at the given temp & timings.
