  1. Take of peppers.
  2. Take 2 of sweet long Italien peppers.
  3. Prepare 1/2 tsp of olive oil.
  4. Make ready 100 grams of very mature Gouda, Cheddar or Tallegio cheese.
  5. Prepare 2 slice of rustic or white bread.
  6. Take of pesto.
  7. You need 1/2 large of lime, Juice only.
  8. Prepare 1 of whole garlic clove..
  9. Take 3 of anchovy filets in oil.
  10. Prepare 1/2 of dried chilli, seeds removed.
  11. Take 30 grams of peeled walnuts.
  12. Take 3 of top sprigs of fresh basil.
  13. It’s 1 1/2 tbsp of olive oil.
  14. Take of drizzle.
  15. It’s 1 tbsp of of pomegranate syrup or balsamic vinegar for drizzle.

  1. Heat a large griddle pan and set on high heat. Cut the peppers in half so that you can fill them and remove the seeds.
  2. Brush peppers from both sides with olive oil, place cut side down into griddle pan and cook for about 4-6 minutes until they start to slightly soften.
  3. Turn over and add the sliced cheese into each half.
  4. Cook until the cheese has melted, make sure that the pepper is softened but not burned to much . The skin will char.
  5. Whilst the are cooking make your white pesto by adding all pesto ingredients into a blender. Blend until they are a rough paste.
  6. When the cheese is melted put your pan under a grill or broiler for a few minutes to brown of the cheese . Do not put the handle underneath.
  7. Arrange your peppers , two per person on a plate, add the pesto and drizzle with the pomegranate syrup or balsamic vinegar , serve with bread.
