Ingredients of Bengali Bhuna Khichuri / Khichdi
- It’s 1/2 cup of basmati rice.
- You need 1/2 cup of moong dal (split green gram).
- Make ready 1 cup of cauliflower florets.
- You need 10-12 of french beans, cut into 1" piece.
- Take 1 of carrot, cut into 1" piece.
- Make ready 1 of potato, chopped.
- It’s 3 tbsp. of mustard oil.
- It’s 2 of bay leaves.
- Make ready 2 of dry red chilies.
- Make ready 1" of cinnamon.
- Prepare 2 of green cardamoms.
- Prepare 4-5 of cloves.
- It’s 1 tsp. of cumin seeds.
- You need 2 of green chilies, slit.
- You need 1" of ginger, julienne.
- You need to taste of salt.
- Make ready 1/2 tsp. of turmeric powder.
- Prepare as required of coriander leaves, green chilies and lime wedges to garnish.
- Take 1 tbsp. of roasted coriander-cumin powder.
- It’s as needed of begun bhaja / aloo bhaja (eggplant fry / potato fry) to serve.
- Take 1 tsp. of ghee.
Bengali Bhuna Khichuri / Khichdi instructions
- Dry roast the moong dal till light brown. Soak the rice and dal for 30 minutes. Heat 2 tbsp. oil and saute the potatoes and cauliflower separately till light brown. Keep aside..
- Heat the remaining oil and fry the cumin seeds, bay leaves, ginger, dry red chilies, green chilies, cinnamon, cardamoms and cloves. Saute for a few seconds till the crackling stops..
- Add the soaked and drained rice and moong dal. Saute for 2 minutes. Add 2 cups water, salt, coriander-cumin powder, turmeric powder and the fried veggies, carrots and beans (Preserving few to garnish)..
- Pressure cook for 2 whistles. Drizzle ghee and garnish with coriander leaves. Serve hot with begun bhaja (fried eggplants), lime wedges and green chilies..
