- Prepare 250 g of tomatoes.
- Prepare 4-5 of green chillies.

- You need 3 tbsp of cooking oil.
- Take to taste of salt and sugar.
- Prepare of Lime juice.

- Wash the brinjals and cut into small pieces..
- Chop tomatoes, chillies, coriander and keep aside.
- Heat the oil in a deep based frying pan. Put the pieces of brinjals in and lightly fry them for a minute..
- Add chopped tomatoes, chillies and coriander leaves and ginger garlic paste to the brinjals..
- Stir fry till the brinjals and tomatoes soften. Add little bit of water and allow it to dry up..
- Add salt and sugar and cook on a low flame for a minute or two..
- Remove from flame and serve sprinkling lime juice over..
