  2. Prepare 250 g of tomatoes.
  3. Prepare 4-5 of green chillies.
  4. You need leaves of fresh coriander.

  6. You need 3 tbsp of cooking oil.
  7. Take to taste of salt and sugar.

  1. Wash the brinjals and cut into small pieces..
  2. Chop tomatoes, chillies, coriander and keep aside.
  3. Heat the oil in a deep based frying pan. Put the pieces of brinjals in and lightly fry them for a minute..
  4. Add chopped tomatoes, chillies and coriander leaves and ginger garlic paste to the brinjals..
  5. Stir fry till the brinjals and tomatoes soften. Add little bit of water and allow it to dry up..
  6. Add salt and sugar and cook on a low flame for a minute or two..
  7. Remove from flame and serve sprinkling lime juice over..
