This is more like a sticky gooey absolutely yummy peach cobbler with a crunchy top.I used half white sugar and half brown sugar which was so-o-o good added a teaspoon of cinnamon and used half white flour half whole wheat.I will pick up peaches tomorrow for this recipe.I know from the ingredients that this is the real McCoy.

Peach Cake step by step

  1. Preheat oven to 350 deg. lightly grease a 9 X 13 baking dish with butter or non-stick spray.
  2. Beat together cake mix, jello, eggs, oil and vanilla in a large bowl or mixer until just incorporated, then fold in the chopped peaches.
  3. Pour batter into greased baking dish, then place in oven and bake for 40 t0 45 minutes or until toothpick inserted in center comes out clean.
  4. Remove cake from oven and let cool completely.
  5. While cake is cooking, combine brown sugar, heavy cream and butter in a large sauce pan over medium heat.
  6. Bring mixture to a boil and cook for an additional 1 minute, then remove mixture from the heat stir in the vanilla extract.
  7. Set up ice bath with a large bowl full of ice water (If desired). Carefully place frosting pan into the ice bath and use a mixer to being careful not to get any water into the frosting mix. Beat until mixture cools, thickens fluffy and airy. About 4 to 5 minutes.
  8. Spread frosting over cooled cake, then slice into squares and enjoy.

This is one of our new favorite cake recipes!We are big peach lovers, but since fresh good peaches are hard to find, I did use the canned sliced peaches (the large can), drained and cut the peach slices in two so the peaches would be in every bite (next time I will probably add another small can of peaches).Don't expect this to be a regular cake-cake.
